Here's the thing every Cappadocia guide leaves out, and it's the single most important thing about planning this trip.

The balloons get cancelled a lot. Wind, weather, whatever, and the call gets made at 4 or 5 in the morning after you've already dragged yourself out of bed. It happens constantly, and it is the reason people come home from Cappadocia disappointed after spending a small fortune on the one photo they went there for.

So here's how you actually do this iconic trip, so you don't leave super disappointed.

This is the most crucial section; if you're going to read anything, read this. 

Book at least 3 mornings. Not one. Three. Every morning is a gamble with the weather, and if you only give yourself one shot, you're taking a huge risk. Most companies will roll your booking to the next morning or refund you if they cancel, but they can't roll it if it's your last day there. 

Book the first morning of your trip, not the last. If you fly, amazing, you've got the rest of your days free. If it doesn't, you've still got more chances. People who book it for their final morning and get cancelled have no backup, and that sucks; don't do that!!!

Go with an actual operator, not the cheapest one. Kapadokya Balloons in Göreme is the one I'd recommend. It's one of the oldest operators there and has a great rep. 

Pay for the earlier slot if there is one. The wind tends to pick up as the morning goes on, so the first flights of the day are the ones most likely to actually go up. You get the prettiest sunrise too so it's a double win.

Where should you actually stay?

Everyone stays in a cave hotel, and yes, you should; they're the whole point. But which area you pick genuinely changes the trip, and it can be hard and overwhelming to pick! 

Uçhisar, if you want the view and the quiet

Uçhisar sits high, so you get the balloons floating below and around you rather than looking up at them, and it's calmer than Göreme by a LOT. This is where I'd stay.

  • Argos in Cappadocia, Tekelli, Kayabaş Sk. No: 23, Uçhisar. Built into restored cave dwellings and tunnels, and the setting is the reason to go.
  • Museum Hotel, Tekelli, Göreme Cd. No.1, Uçhisar. Known for the view and for how seriously it takes the whole cave hotel concept.
  • Ariana Sustainable Luxury Lodge, Tekelli Kümesi No:8, Uçhisar. The quieter, more design-forward pick of the three.

Göreme, if you want to be in the middle of everything

Göreme is the base town. It's walkable, it's where the restaurants and the tour operators are, and it's also busier and more touristy. If it's your first time and you want zero friction, stay here.

  • Sultan Cave Suites, Aydınlı - Orta, Çakmaklı Sk. No:40, Göreme. This is the terrace you've seen in every single Cappadocia photo on the internet. Book it knowing that, and knowing you'll be sharing that terrace at sunrise.

Ürgüp, if you want something less touristy

Ürgüp is a real town rather than a tourism town. Bigger, more lived in, fewer people in balloon-print sweatshirts. It's a bit further from the valleys, but you get a version of the trip that feels less staged.

  • Kayakapi Premium Caves, Kayakapı Mahallesi, Kuşçular Sokak No:43, Ürgüp. Built into a restored old neighborhood, and it's the one I'd pick if I wanted to feel like I lived in the area. Important to note though since it is less touristy it may require more planning effort/transportation considerations.

What to do when the balloons don't fly

This is what you do if you miss the balloons and what makes the trip actually feel like a trip instead of just being trying to do one thing. 

The valleys

Great if you like hiking/walking to explore more of the gorgeous sights in the area. Go at sunset, midday is way too hot, and wear real shoes.

  • Love Valley: The one everyone jokes about. 
  • Rose Valley: Goes pink at sunset and it's the prettiest walk of the three.
  • Devrent Valley: The "imagination valley," where the rocks look like animals if you squint. Quick stop, not a whole afternoon.

Other cool places to explore

These are a mixture of other valleys and museums that are also super fun and interesting, especially if you're curious to learn more about the history and culture of the area. 
  • Göreme Open Air Museum: Rock-cut churches with frescoes still on the walls. Go early, it fills up.
  • Derinkuyu Underground City:  An entire city carved down into the earth, multiple levels deep. Skip it if you're claustrophobic, and I mean that seriously rather than as a fun caveat.
  • Uçhisar Castle: Climb it for the best view over the whole region. This is the sunset spot.
  • Ihlara Valley: A green river gorge, which is not what you expect from Cappadocia at all. It's a drive, so make it a day trip!

The Experiences

Here I've put a mixture of museums, activities, and fun experiences you can do, some of these do require booking in advance, so keep that in mind! 
  • Kapadokya ATV Turları: Quad biking through the valleys. Touristy, yes. Also genuinely a good time, especially at sunset.
  • Dalton Kardeşler At Çiftliği: Horseback riding, which is fitting since Cappadocia literally means "land of beautiful horses."
  • Güray Müze:  An underground pottery museum, and Avanos is the pottery town, so this is where that tradition actually lives.
  • Chez Galip Hair Museum: A cave full of thousands of locks of women's hair. It is deeply strange and I would absolutely go.
  • Shecooks Cappadocia:  A cooking class! Super fun for all the foodies.

Trust me, this is a section I would never forget, especially not in Turkey. 
  • Seten Restaurant, The nicer dinner of the trip.
  • Kaira Rooftop Bar & Restaurant, Rooftop, and it's 16 and over, so it's not a family scene. This is your drink at sunset.
  • Pumpkin Göreme Restaurant and Art Gallery, Set menu situation, small, and the art gallery part makes it unique.

  • Ürgüp Inn Cafe and Brunch, Turkish breakfast, treat it as an event rather than a meal, give yourself time to fully experience everything.

How many days you actually need

At a minimum of 3, but if you want to experience everything fully, I would highly recommend 4. 4 gives you time if things happen with the balloons, while also leaving enough room for experiences, exploring valleys, and even taking a day trip in the area. I absolutely hate feeling rushed on vacation, so I would always rather plan for an extra day and leave satisfied instead of feeling pulled to every corner to tick something off a list.

The sunrise is the point, and that applies to days when you're not going up in a balloon, too. Even on a morning when nothing flies, get up anyway, go sit at a terrace with a coffee, and watch the light hit the valleys; it's gorgeous, and you'll be able to nap or sleep in another day. I know it may feel horrible at first, but I promise it's so worth it, and you'll thank me once you see that view. 

Save the collection before you go so you're not standing in Göreme at 8 pm scrolling for the name of a restaurant you forgot about!

Do the hot air balloons in Cappadocia always fly?
No, and this is the most important thing to know before you book. Flights get cancelled regularly for wind and weather, and the call usually comes at 4 or 5am. Book at least 3 mornings so you get multiple chances, and put your first attempt at the start of your trip rather than the end.
What happens if your Cappadocia balloon ride gets cancelled?
Most operators will either roll you to the next morning or refund you. The problem is that they can't roll you to a morning you're not there for, which is why booking a trip with only one balloon morning in it is a gamble I wouldn't take.
How many days do you need in Cappadocia?
4 days. Most guides say 2 or 3, but that doesn't leave you enough balloon mornings, and it doesn't leave room for Derinkuyu and Ihlara Valley, which are both a drive. Four days is what makes the trip work even if the weather doesn't cooperate.
Should you stay in Göreme, Uçhisar, or Ürgüp?
Göreme if you want to be in the middle of everything and walk to dinner and the tour operators. Uçhisar if you want the elevated views and a quieter stay, which is what I'd pick. Ürgüp if you want a real town rather than a tourist town, at the cost of being a bit further from the valleys.
Are cave hotels in Cappadocia worth it?
Yes, and I wouldn't stay anywhere else. It's the one place where the accommodation is genuinely part of the trip rather than just somewhere to sleep. Book the terrace room if it's offered, because you'll spend every sunrise on it.
Is Cappadocia worth it if you don't do the balloon ride?
Yes, and I'd argue this is the most underrated thing about the whole region. The valleys, the underground cities, the rock-cut churches, and the cave hotels are all worth the trip on their own. If you plan the trip so the balloon is a bonus rather than the entire point, you'll never leave disappointed.
What's the best time of year to visit Cappadocia?
Spring and fall give you the best combination of weather and balloon flight rates. Summer is hot and crowded, and winter is beautiful in the snow but you'll see more cancellations. Whatever season you pick, the 3 morning rule still applies.
Do you need a car in Cappadocia?
Not necessarily, but it helps. Göreme is walkable and tours will pick you up for the big sites, but if you want to do Ihlara Valley and Derinkuyu on your own schedule, a car or a driver makes it much easier.
